About this bread knife
A good bread knife saws through a crisp crust without crushing the crumb. The teeth on this blade are shallow and pointed, with a pitch of around 4–5 mm, which grips a hard crust and then clears the soft interior with little tearing.
It also handles tomatoes, cakes, citrus and soft-skinned fruit. The blade is long enough for a large loaf and thin enough not to wedge.
The handle is oak, shaped with a slight swell so the hand does not slip forward during a long stroke.
Craft details
The serrations are cut and finished individually before the blade is sharpened along the ground face, then the handle is shaped, pinned and oiled.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
