About this chef's knife
At 240 mm this is a knife for cooks who prepare a lot of food and want reach. The long, relatively flat edge suits push-cuts and long slicing strokes through larger vegetables, joints and cooked meats.
80CrV2 is a carbon steel that sharpens quickly and takes a very fine edge. It is not stainless: it will develop a grey-blue patina with use and needs to be dried promptly. Many cooks value exactly that character.
The oak handle is lightly rounded and finished with oil. Its open grain gives a good grip when hands are damp.
Craft details
The blade is ground to a thin profile behind the edge and left with a soft satin finish that shows the steel’s character. The oak handle is shaped by hand, which gives every knife slight individual variations in grain and feel.
Care guidance
- Carbon steel will darken as it works. That patina is normal and protective; it is not a fault.
- Wipe the blade clean whenever you switch between onions, citrus, tomatoes or anything acidic, and wash and dry thoroughly after use.
- Never use a dishwasher and never leave the knife wet, even for a short time. Surface rust can form within hours.
- If you store the knife for a while, wipe the blade with a very thin film of food-safe oil.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when needed. Avoid cutting bone, frozen food or hard shells.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
