About this chef's knife
The 210 is the knife most cooks reach for first. The blade has a gentle belly for rocking cuts, a fine tip for detail and enough height at the heel to keep knuckles clear of the board.
It is ground full flat from the spine to a thin edge, which means it moves through onions, herbs and firm vegetables with very little resistance. The AEB-L stainless steel takes a keen edge, holds it well in daily home cooking and is straightforward to sharpen.
The tapered octagonal walnut handle sits comfortably in a pinch grip and in a relaxed hold, and is finished with oil so the grain stays visible and the surface stays warm to the touch.
Craft details
Blade profile, grind and edge are finished by hand. The walnut scales are shaped to the tang, pinned and sanded through the grits before oiling, so the transition from steel to timber is flush under the fingertip.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
