About this paring knife
A small knife does a surprising amount of the work in a kitchen: hulling strawberries, trimming fat, segmenting citrus, peeling and coring. The 90 mm blade is long enough for control and short enough to stay out of the way.
It has a straight edge and a spear point, which makes it equally useful held in the hand or used against a board. The AEB-L stainless steel is thin and quick to sharpen.
The walnut handle is compact and tapered, shaped to disappear in the palm.
Craft details
The blade is ground thin and the spine and choil are eased by hand so the knife is comfortable to hold close to the edge.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
