End-grain vs edge-grain, explained

Timbers

Four woods, four characters.

Walnut

Dark, fine-textured and forgiving of marks. Our largest end-grain board and our round serving board are walnut.

Maple

Pale, hard and tight-grained, with very little visible pore. Smooth and quiet under the knife.

Oak

Hard-wearing, with a pronounced open grain. Prompt washing and drying, plus regular oiling, help keep the surface in good condition. Used for our large juice-groove board and long serving board.

Ash

Pale and light, with a clear flowing grain. Its open texture benefits from prompt cleaning, thorough drying and regular oiling; suitability depends on how and where the board will be used.

The range

All nine boards.

A board is a living surface.

Timber takes up and gives off moisture. Look after it evenly and a board will stay flat, smooth and sound for years.

  • Wash by hand with warm water and a little mild detergent; dry at once.
  • Stand on edge to dry so both faces dry together. Never soak or use a dishwasher.
  • Oil with food-safe mineral oil or board conditioner when the surface looks dry.
  • Use separate surfaces for raw products and ready-to-eat food; clean thoroughly with hot, soapy water between uses.
