About this chopping board

End-grain construction means the board’s surface is made from the cut ends of the timber fibres, arranged in a checkerboard. A knife edge slides between those fibres rather than across them, which is gentler on the edge and helps the surface recover from knife marks.

This is our largest and heaviest board. At 40 mm thick it stays put on the worktop and has the mass to take the force of heavy chopping. Walnut is a dense, fine-textured timber with a deep colour.

It needs more oil and more attention than a long-grain board, and it repays that attention with a surface that looks better with age.

Craft details

Strips are glued, cut across and re-glued to expose the end grain, then flattened, sanded through the grits, eased at the edges and oiled by hand.

Care guidance

  • Wipe or wash with a cloth, warm water and a little mild detergent straight after use. Rinse and dry with a cloth.
  • End grain absorbs more than a long-grain surface. Oil generously when new, then whenever the surface starts to look dry, often every few weeks at first.
  • Stand the board on its edge to air-dry, away from radiators and direct sunlight. Never soak it or put it in a dishwasher.
  • Turn the board regularly so wear is spread evenly across both faces, and keep both faces oiled to the same degree.
  • Treat odours and stains with coarse salt and half a lemon, then rinse, dry and re-oil.
  • Use separate surfaces for raw products and ready-to-eat food, and clean thoroughly with hot, soapy water between uses.
