About this utility knife
Often called a petty knife, the utility is the one that ends up in your hand for sandwiches, shallots, small fruit and herbs. It reaches where a chef’s knife is clumsy and offers more control than a paring knife.
The 135 mm blade is thin and lightweight in AEB-L stainless steel, with a slim profile and a narrow, pointed tip.
The walnut handle matches our chef’s knife in shape and finish.
Craft details
The grind is finished so the blade is thinnest at the tip and thickens subtly toward the heel, keeping the front of the knife precise and the rear strong.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
