About this paring knife
The bird’s beak, or tourné, shape has a short blade that curves downward. It is made for peeling round fruit and vegetables in one hand, trimming mushrooms and cutting decorative shapes, and it does these jobs better than a straight knife.
The 14C28N stainless blade is slim and light, with a keen tip. It is a specialist tool and a very pleasing one for anyone who enjoys detailed knife work.
The pale maple handle is small and rounded, and is finished with oil.
Craft details
The curve is shaped by hand and the edge is finished along its full arc, so it cuts evenly from the heel to the tip.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
