About this santoku
Not every kitchen needs a long blade. The compact santoku has the same flat edge and lowered tip as its larger sibling but is shorter, lighter and easier to control on a small board or in a small kitchen.
It is a practical choice for confident cooks who prefer a nimble knife, for people with smaller hands, and for anyone who mostly prepares vegetables, fruit and boneless proteins.
The blade is thin behind the edge, in 14C28N stainless steel. The handle is pale maple, shaped to a soft oval and finished with oil.
Craft details
Because the blade is short and thin, the balance point is tuned to sit just forward of the handle, so the knife feels light without feeling toy-like.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
