About this santoku
The santoku is a Japanese-influenced all-purpose shape: a flatter edge than a western chef’s knife and a lowered tip. It encourages an up-and-down chopping motion and is excellent for vegetables, boneless fish and anything that needs to be cut cleanly to the board.
This one is a little shorter and lighter than our chef’s knives, with a wide blade that doubles as a scoop for moving prepared ingredients. The 14C28N stainless steel is fine-grained, tough and easy to maintain.
The pale ash handle is straight-sided and slightly oval, comfortable for a pinch grip and visually quiet.
Craft details
The flat profile is checked against the board before the edge is finished, so the whole length of the blade makes contact. Ash scales are shaped, pinned and oiled by hand.
Care guidance
- Wash by hand in warm water with a little mild detergent soon after use, and dry straight away with a soft cloth, keeping the edge turned away from you.
- Never put the knife in a dishwasher and never leave it to soak: heat, detergent and standing water are hard on both timber handle and edge.
- Cut on timber or soft synthetic boards. Glass, stone, ceramic and steel surfaces will dull the edge within a few uses.
- Use the honing or maintenance method suited to this knife and its edge; re-sharpen when that maintenance no longer restores clean cutting.
- Store in a blade guard, a knife block or on a magnetic rack, never loose in a drawer.
- Once or twice a year, rub a thin coat of board oil into the handle and wipe off the excess.
